I do think a gas cook top could be the ideal. I only select electric because my gas line volume in my condo was designed for heating and nothing else. A gas top oven and heavy cast iron cook wear is a favorite of mine. a stove that has several flexibility can approximate gas being a second choice, but it really is still nothing compared to cast iron and hearth. I do use our cast iron with my flat top at times and with some changes in pan handling I get the result I want. Asha Redish
