I'm looking into redoing our kitchen countertop. But running into issues near the sink. Is it ok for granite countertop to overlap undermount sink?

Granite counter tops have to overlap an under mount sink at least a little bit so you can seal the sink to the granite. If you have an under mount sink in the counter that you plan to replace with new granite, than make sure that you meet with the granite fabricator and see what your options are. They should be able to cut and polish any size hole you want, wherever you want.

If you are buying a pre-fabricated top that already has a sink hole cut out in it, then I am afraid you are going to have to go with what it is unless you have the cutting and polishing tools for granite fabrication.

If the under mount sink is not going to work the way you want, you can always try to fit a self rimming sink in the counter by enlarging the hole and positioning the sink where it might work better. Enlarging a hole in granite is relatively easy and can be done with a 4.5" angle grinder and a dry cut diamond wheel.
